This study examines demand for fruits and vegetables segmented by income levels in a complete demand system framework using the Consumer Expenditure Survey (CEX) from 2002 to 2006. Results show that disparities are found between high-income households and low-income households. Seasonal effects and demographic variables, such as household heads’ race and gender, region, household size and household composition, play an important role in fruit and vegetable consumption for both categories of household. In contrast, urban status, household heads’ educational level and age are not found to have a statistically significant impact for low-income households. This paper develops a fully structural econometric consumer demand model for goods which have time and monetary costs, and where time spent obtaining the goods also enters into the utility function. The model is used to analyze customers' decision to buy pick-your-own versus pre-harvested fruit at North Carolina pick-your-own fruit operations. The empirical application distinguishes the double effect of time as a resource constraint and also providing utility. Elasticity estimates show that strawberries sold at pick-your-own operations are price elastic, with pick-your-own fruit being less price elastic than pre-harvested fruit. |

In this paper, using pseudo panel data we analyze the relation between cigarette and alcoholic beverage consumption within the rational addiction framework. We believe that pseudo panel data approach has many advantages compared to aggregate and panel data models. We found that alcoholic beverages are complements for cigarettes, while it is not the same the other way around. Moreover, we found that alcohol is a gateway for cigarette which further supports our conclusion concerning the reinforcing effect of alcohol consumption on cigarette consumption. Analysis of demand for pansies and mums sold in independent garden centers indicates that price and age are important factors influencing demand. In the fall of 1996, data were collected from a survey of independent garden centers in North Carolina. Statistical analysis was conducted by estimating the relationship between consumer expenditure shares of pansies and mums and prices paid per plants, household income, and various demographic and product characteristic variables. The models were estimated by the least-squares method with correction for selectivity bias, resulting from zero purchases. Demand for selected nursery plants sold in North Carolina (i.e., begonia, dianthus, geranium, impatiens, marigold, petunia, and vinca) was found to be affected more by prices than by income, demographic, and other variables. By using cross-sectional data, a modified AIDS model, incorporating demographic variables and quadratic income response, was estimated. Inverse Mills's ratios were also included in the model to correct for selectivity bias, resulting from zero purchases. Significant own-price elasticities ranged from -0.71 to -1.65, and income elasticities ranged from -0.78 to 0.41. |

We take a structural approach to examine the effects of larger container size on consumption of carbonated soft drinks---using Nielsen Company's Homescan data on household purchases for the years 2004 through 2006. Our results show that by removing the price discount implicit in packages with larger container size, the average unit price the two households pay for CSD products increase and hence both households (both the low income and the high income) reduce their annual consumption of soft drinks by about 75%. This reduction is due to a combination of reduced number of purchases and switching to products with less number of bottles/cans. |

This paper examines the extent to which observed changes in per capita beef consumption can be accounted for by changes in relative prices and per capita real income. Particular attention was given to specifying the functional form by focusing on the nature of demand shifts over time. These considerations led to selection of the Fourier flexible form with a Fourier series expansion in relative meat prices. The results support the hypothesis that recent shifts in demand for beef can be attributed to changes in relative prices of competing meats, especially poultry. |

Implementation of the Pathogen Reduction and Hazard Analysis and Critical Control Points (PR/HACCP) regulations has occurred across all U.S. meat and poultry plants. A probit model is estimated to determine which factors have affected the probability of red meat slaughter plant exit during implementation of the regulations. While controlling for plant-level, company-level, regional-level, and supply conditions that may affect the probability of plant exit, smaller plants are found to exhibit a much greater probability of exit than larger plants. Other factors affecting plant exit include plant age, market share relative to the degree of market concentration, regional entry rates, and state-level wage rates. |
